Servings/Yield: 6 servings


1 lb. navy beans (Great Northern)

7 cups water (I used about 10)

1 ham bone

2-3 cups cubed ham

¼ cup minced onion

½ teaspoon salt

1 bay leaf

dash pepper

3 cups diced potatoes


Rinse beans. Heat beans and water to boiling--boil for 2 minutes. Remove from heat and let stand for 1 hour. Add ham bone, ham, onion, salt, bay leaf and pepper and simmer until beans are soft (1 hour or more). Remove ham bone and bay leaf. Cut meat from bone, add to soup. Add diced potatoes and cook about 20 minutes longer. Season to taste.
