BREAD STUFFING (Jay)

Ingredients

12 ounces pork sausage 3/4 cup finely chopped onion

1 1/2 cups chopped celery (with leaves)

1 cup butter or margarine

9 cups soft bread cubes 

2 teaspoon salt

1 1/2 teaspoon dried sage leaves

1 teaspoon dried thyme leaves

1/2 teaspoon pepper

2 eggs

Method

Brown sausage and set aside. Cook and stir onion and celery in butter in 10-inch skillet until onion is tender. Stir in about 1/3 of the bread cubes. Turn into deep bowl. Add cooked sausage, onions, celery and spices and toss. Add eggs and mix with hands. Stuff turkey just before roasting.


If baking separately from turkey, bake at 350 degrees in a covered, oven-safe dish or a foil-covered pan.  It will probably take 30 to 45 minutes, but keep an eye on it.  If it’s in the same oven as the turkey, the time may vary a little more depending on the temperature. The cover will keep the top from getting “crusty.”  You should put a couple pats of butter on it before baking to keep it moist.
