Ingredients
12 ounces pork sausage 3/4 cup finely chopped onion
1 1/2 cups chopped celery (with leaves)
1 cup butter or margarine
9 cups soft bread cubes
2 teaspoon salt
1 1/2 teaspoon dried sage leaves
1 teaspoon dried thyme leaves
1/2 teaspoon pepper
2 eggs
1 or 2 tablespoons of chicken broth if cooking separately from turkey
Method
If baking separately from turkey, drizzle broth over the bread cubes and gently mix until the bread is evenly moistened.
Brown sausage and set aside. Cook and stir onion and celery in butter in 10-inch skillet until onion is tender. Stir in about 1/3 of the bread cubes. Turn into deep bowl. Add cooked sausage, onions, spices and the remainder of the bread cubes. Add eggs and mix with hands. Stuff turkey just before roasting.
If baking separately from turkey, bake at 350 degrees in a greased, covered, oven-safe dish or a foil-covered pan. You should put a couple pats of butter on it before baking to keep it moist. Baking time will probably be 30 to 45 minutes, but keep an eye on it (baking time for gluten-free stuffing should be about the same). If it’s in the same oven as the turkey, the time may vary a little more depending on the oven temperature. Bake until the top of the stuffing is golden brown and lightly crisp. The cover will keep the top from getting “crusty.”
