CASHEW BRITTLE

Ingredients

1 can (9.5 oz. or 2 cups) roasted, salted cashew halves with pieces

1 cup sugar

½ cup light corn syrup

1 teaspoon butter

1 teaspoon vanilla

1 teaspoon baking soda

Method

Grease a cookie sheet well with butter; set aside. Chop the cashews coarsely to make the candy spread thinner in the pan.

In a 2 quart glass measuring cup with handle, stir together the nuts, sugar and syrup.  Microwave on high until mixture is light brown, about 6-8 minutes, stirring well halfway through.  (6 1/2 minutes is about right on my GE Advantium).

Remove mixture from microwave, stir in butter and vanilla and cook on high for another 1 1/2 to 2 minutes.  (1 1/2 minutes seems ideal on my microwave).  Mixture should be caramel colored.  Remove from microwave and add baking soda.  Stir quickly until light and foamy.  Immediately pour onto greased cookie sheet and spread with back of a spoon that has been sprayed with Pam.

Let brittle cool, then break into pieces.
