DATE BALL COOKIES

Servings/Yield: about 3 dozen cookies

Ingredients

2 cup sugar

2 eggs

1 lb. pkg pitted dates, chopped

1 teaspoon salt

1 cup butter or margarine

2 teaspoons vanilla

5 cup Rice Krispies®

1 cup finely chopped nuts

Flaked coconut

Method

Mix sugar, eggs, dates, salt and butter in saucepan. Cook over medium heat until thick, stirring constantly. Remove from heat. Add vanilla and nuts to mixture, then pour warm mixture over cereal in large bowl. Mix well. Cool briefly, butter hands, then roll into 1 inch balls. Butter hands often. Roll in flaked coconut.
