GINGERBREAD COOKIES

Ingredients

1 cup Crisco shortening

1 cup sugar

1 egg

½ teaspoon vanilla

1 cup dark molasses

½ cup strong coffee, chilled

5 ½ cup flour

1 tablespoon baking soda

2 teaspoons baking powder

1 teaspoon salt

1 teaspoon cinnamon

Method

Cream Crisco and sugar. Add egg, vanilla, molasses and coffee. Set aside. Mix together flour, baking soda, baking powder, salt and cinnamon. Add to first ingredients, mix thoroughly.

Roll dough and cut into gingerbread men. Bake on lower rack at 350-375° until puffy (about 4 minutes); move to top rack and bake another 2-3 minutes Cool and frost.
