LOW-FAT SHRIMP AND VEGGIES

Ingredients

Shrimp

Veggies

Raw shrimp, peeled and deveined (ab 12 per person)

Mushrooms

Grape tomatoes

Marinate in soy sauce, lime juice and a little Equal to sweeten

Mini-squash, mini-zucchini, cut up pieces of sweet corn, or any veggies you like to grill

Marinate in a fat-free Italian dressing such as Kraft or Wishbone

Method

Place veggies in a grill basket and grill for 20-25 minutes Skewer shrimp, mushrooms and tomatoes (you may want to put each on separate skewers, as their cooking time may vary--the shrimp will probably cook faster [about 5 minutes] than the mushrooms or tomatoes).
