Ingredients
1 ⅓ cup sifted flour
4 eggs (very fresh)
1 ⅓ cup milk
2 ½ tablespoons melted butter
Method
Preheat the oven to 450°. Grease 6 of the holes in 2 12 cup muffin pans, greasing especially heavily at the bottom. Also grease the pan surface between the holes. Put a little water in each of the unused holes in the pan.
Put the sifted flour into a large bowl. In a smaller bowl, beat the eggs lightly. Add the milk to the eggs and mix well. Add this liquid gradually to the flour, beating with a mixer or wire whisk to incorporate it. Beat in the melted butter, beating the mixture as much as you like--it doesn't seem to make a lot of difference.
Pour the batter into the greased holes of muffin pan. Bake the popovers for 30 minutes, reduce the temperature to 350 and bake for an additional 15 minutes. Remove from pans and serve hot, with butter.
