POTATO PANCAKES

Ingredients

2 cup grated raw potatoes

2 eggs, well beaten

¼ cup milk

2 tablespoons flour

1 tablespoon grated onion

1 teaspoon salt

1 teaspoon dried parsley

Oil

Method

Mix all ingredients together in large bowl. Pour oil in heavy skillet, heat. Drop mixture by spoonfuls into hot skillet. Fry until golden brown, turning to cook both sides.

May be served with sour cream, applesauce or warmed cream of mushroom soup (condensed - no water added).
