POTATOES, KINCAID'S GARLIC

Servings/Yield: 8 servings
2 lbs. new potatoes
1 ½ teaspoons Kosher salt
¾ teaspoons pepper
½ cup freshly grated Parmesan cheese, divided
1 stick butter
4 cloves garlic, minced
Combine butter and garlic in sm saucepan, heat to melt butter.
Makes 1/2 cup.
Wash potatoes, cut into slices 3/8 inch thick and 2 1/2 inches long. Wash potato slices again to remove excess starch; drain. Place potatoes in bowl, add garlic butter, salt and pepper and all but 2 Tbsp Parmesan; mix well. Arrange potatoes in single layer in baking pan, then sprinkle with remaining Parmesan over top.
Bake in 425° oven for 25-30 minutes.
Potatoes should be golden brown and cooked tender with a slightly crisp exterior.
